Spaghetti Squash are an oval and yellow squash with 15-25 cm in length. They've got their name because their flesh looks like spaghetti when cooked - it shreds in long strings, and consistency is also reminiscent of cooked spaghetti. However, they don't taste like spaghetti. They taste like squash, but with a tomato sauce and parmesan, it's a great substitute for ordinary spaghetti.

Spaghetti squash is cut in halves, and is baked in the oven "facing" downward for about half an hour. When spaghetti squash has cooled off a bit, you can use a fork, and scrape the flesh to create long strands.

It takes three to four months for the squashs to fully ripen in climate similar to the Scandinavian climate. Therefore it can be beneficial to start germination indoors from around mid-March - beginning of April. It's important that the small plants get plenty of light, otherwise they will be too thin and pale.

The squash plants can be moved into the garden when the temperature constantly stays above 10 degrees.

Once they start growing, the plants grow quickly and are almost climbing along the ground. They need plenty of space.

The Spaghetti Squashs ripen from green to yellow, and they can be harvested when they are yellow and 15-25 cm long.
